Shrimp Alfredo – Tips
- Don’t overcrowd the pan! Cook the shrimp in batches to ensure they sear nicely and cook evenly.
- Reserve some pasta water! Starchy pasta water will help adjusting the consistency of your sauce. Add a tablespoon or two at a time to loosen up a sauce if that’s too thick.
- Freshly grated cheese is always best! Avoid using pre-shredded parmesan as it contains anti-caking agents that can prevent it from melting smoothly.
- Want to add some veggies? Stir in steamed broccoli florets, chopped asparagus, or sun-dried tomatoes for a more colorful and nutritious dish.
- For the cream, you can use use milk or half and half, but the sauce wont be as creamy, you thicken it with a cornstarch slurry.
Recipe Variations
- Add a splash of dry white wine to the sauce along with the garlic for extra depth of flavor.
- Spice it up! Red pepper flakes or a pinch of cayenne pepper can add a nice kick.
- Go green! Sub out half of the heavy cream with pesto for a vibrant and flavorful twist.
