Shrimp:
- 1 lb medium shrimp, pat dry in paper towels
- 1 Tbsp olive oil
- 1/4 tsp black pepper
- 1/2 tsp sea salt
- 1/4 tsp cayenne pepper
- 1/4 tsp ground cumin
- 1 minced garlic clove
For The Taco Toppings:
- 8 white corn tortillas, 6” diameter
- 2 cups purple cabbage, shredded, thinly sliced
- 1 large avocado, diced, seed removed
- 1/2 diced red onion
- 4 oz Cotija cheese, grated
- 1/4 bunch cilantro, coarsely chopped
- 8 lemon wedges (from 1 lime)
For The Taco Sauce Ingredients:
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 1/2 Tbsp lime juice, freshly squeezed
