Ingredients
- 1½ lbs medium shrimp, peeled and devained
- 1½ lbs mussels, cleaned
- ½ cup yellow onion, diced
- ¼ cup green bell pepper, diced
- 8 minced garlic cloves, divided
- 1 tomato, diced
- 1 Jalapeno pepper, diced
- 2 tbsp parsley, finely chopped
- 1 (8 oz. can) tomato sauce spanish style
- ½ cup dry white cooking wine
- olive oil or butter, melted
- salt and pepper, to taste
Instructions
- Fill a large bowl with water and soak up the mussels for about 20-30 minutes.
- Remove from the water and remove any beards and rinse off clearly.
- Season shrimp with 4 minced minced garlic, salt and pepper. Set aside.
- Heat large skillet over medium-high heat. Add olive oil. Place the shrimp in a single layer and cook for about 2 minutes per side or until pink and slightly like C shape .
- Remove and set to the side. Cook the remaining shrimp.
- Set on medium heat. Add melted butter. Add the pepper, diced onion and bell pepper. Season with salt and pepper and saute for about about 4-5 minutes or until soft.
- Add the diced tomatoes and the remaining minced garlic. Stir cook for about 4-5 minutes.
- Add white wine, tomato sauce, and water. Bring to a simmer. Add the mussels and gently stir. Cover with a lid and simmer for about 3-4 4 minutes or until the mussels have opened.
- Add the cooked shrimp and stir to combine. Top with freshly chopped parsley and enjoy immediately with crusty bread to soak up the garlicy creamy sauce.
