Ingredients

  • 1 lb med shrimp, uncooked, peeled and deveined
  • 1/4 tsp sea salt
  • 1 tsp cornstarch
  • 3 Tbsp olive oil
  • 1/4 cup green onion, finely chopped
  • 1/4 tsp freshly ground black pepper
  • 4 large eggs, beaten
  • 1 1/2 tsp sesame oil
  • 5 cups chilled white rice, use leftover
  • 12 oz frozen carrots and peas, thawed
  • 2 Tbsp soy sauce, low sodium

Instructions

  1. In a medium bowl, add shrimp, salt pepper and cornstarch. Marinate and let sit for 10 minutes.
  2. Heat a non-stick skillet on medium high heat. Add 2 Tbsp of olive oil, once hot, add shrimp and cook 1 minute on each side or until no longer translucent. Transfer the shrimp to a bowl.
  3. Add the beaten eggs to the skillet and stir cook until perfectly scrambed. Transfer the eggs to a bowl.
  4. Clean up the skillet, set on medium high heat. Add 1 Tbsp oil, add chopped onions and cook for 30 seconds until fragrant.
  5. Add in leftover chiled rice, stir cook for 3-4 minutes until slightly sizzled.
  6. Add soy sauce, sesame oil and vegetables. Combine well.
  7. Add cooked shrimp and scrambled eggs. Mix well.
  8. Stir Cook until the rice is warmed through and sizzles.
