- 1 cup shredded cheddar cheese

- 4 cups water
- 1/3 cup heavy cream

- 5-6 strips bacon, chopped (about 4 ounces)
- 1 lb shrimp, peeled and deveined (about 18-20 )
- 4 scallions, sliced
- 1 tbsp minced garlic
- 2 tsp lemon juice, freshly squeezed
