Ingredients

  • 1 pound shrimp, large sized (peeled and deveined)
  • 2/3 cup white sugar
  • 1 cup water
  • 2 tablespoons honey
  • 4 egg whites
  • 1/2 cup walnut halves
  • 2/3 cup cornstarch
  • 1/4 cup mayonnaise
  • 1 cup vegetable oil for frying
  • 1 tablespoon sweetened condensed milk
  • scallions for topping , optional

Instructions

  1. In a small saucepan. Add water, walnuts and sugar. Bring to a boil and boil for 2-3 minutes.
  2. Remove the walnuts from the pan and set aside to a plate to dry.
  3. Add in egg whites whisk well until foamy. Add cornstarch and whisk well.
  4. Add the shrimp to the batter (one at a time) and thinly coat and drip off.Heat a pot on medium high. Add oil, once sizzling hot. Add the coated shrimp and fry for about 4-5 minutes or until golden browned.
  5. In a small bowl, combine mayonnaise honey, and sweetened condensed milk.
  6. Add the fried shrimp and toss to coat with the sauce. Transfer to a serving plate. Top with dry walnuts, top with sliced scallions and serve immediately over steamed rice.
