Ingredients
For the fried shrimp
- 1 pound shrimp, large sized peeled and deveined, tails attached
- 1/2 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 1 cup panko breadcrumbs
- 2 large eggs
For the sauce
- 2 tablespoons pickled jalapenos, chopped
- 1/2 cup mayonnaise
- 2 tablespoons whole grain mustard
- 1 tablespoon hot sauce
- 1 scallion, thinly sliced
- 1 tablespoon ketchup
Instructions
- Pat the shrimp dry with paper towels. Season salt and pepper.
- In a shallow bowl, Combine flour, 3/4 teaspoon salt and pepper. In another bowl whisk the eggs with a pinch of salt.
- Add the panko in the third bowl. Dip shrimp into the flour bowl, shake off any excess, dip in the beaten eggs then dredge in the panko bowl until well coated.
- Place to a large plate and coat the remaining shrimp.
- Preheat air fryer to 385 degrees F.
- Lightly spray the basket with oil or non stick spray. Place the coated shrimp in single layer. Cook for about 10-12 minutes or until golden browned, fliping halfway through.
