Ingredients
- 10 ounces raw shrimp (thawed if frozen), peeled and deveined
- salt and pepper to taste
- 1-2 tsp avocado oil
- 1 tbsp. Sriracha plus extra for topping
- 1 ½ tbsp. soy sauce, low-sodium
- 1 ½ tbsp. sweet chili sauce
- ¼-½ tsp crushed red pepper flakes to taste
- 1 clove garlic, minced
- ½ tsp ginger, freshly grated
- 1 cup shelled edamame, steamed
- 2 cups cooked rice
- 1 cucumber
- 2 tbsp. fresh coriander leaves
- 1 jalapeño pepper
- ¼ cup green onion, sliced
- 1 cup carrot, shredded
- Sriracha chili sauce for toppings
- Toasted sesame seeds, for topping
- Spicy mayo, for topping
For the mayo sauce
- 2-3 tbsp. sriracha chili sauce to taste
- ¼ cup mayo

Instructions
- Pat dry the shrimp with paper towel and season with a salt and pepper.
- Cook rice in a pot of boiling water or in rice cooker and take out 1 cup cooked rice or half cup rice and shredded lettuce to each bowl.
- In a small bowl, add in sriracha, soy sauce, garlic, sweet chili sauce, ginger, and red pepper flakes. Combine and set aside.
- Whisk mayo and sriracha chili sauce and adjust the spicy level as desired.
- Prepare all the vegetables and add or remove the veggies as desired.
- Heat a skillet on medium heat. Add avocado oil. Add the shrimp with sauce. Simmer uncovered for about 3-4 minutes until thickened and the shrimp is fully cooked and opaque.
- Add the cooked rice and lettuce into the bowl as the base. Add jalapeño, carrots, cucumber, steamed edamame and saucy shrimp on top.
- Drizzle toasted sesame seeds, spicy mayo, and green onion. Add extra sriracha as desired. Enjoy immediately.
