- 1/2 pound raw shrimp (large sized), peeled and chopped
- 1 tablespoon toasted sesame oil
- 2 large scallions, chopped
- 3 cups green cabbage, chopped
- 3 garlic cloves, minced
- 1 teaspoon grated ginger
- 1/2 cups shredded carrots
- 2 tablespoons soy sauce, low sodium
- 1/2 tablespoon rice vinegar, unseasoned
- 6 egg roll wrappers
- Olive oil cooking spray
- For dipping: Sweet chili sauce or spicy mustard
Instructions
- Heat a large skillet on medium-high heat. Add oil, once hot, add the shrimp and cook for about 1-2 minutes or until just cooked through.
- Add ginger, minced garlic and scallions. Stir cook for about 30 seconds or until fragrant. Add shredded carrots, cabbage, soy sauce and vinegar.

- Fold the left right corners towards the center and make a cylindrical roll. Set aside and repeat the same for the remaining wrappers.
- Lightly spray the prepared egg rolls with oil on all sides. Transfer to the air fryer basket and cook at 370 degrees for about 5-7 minutes or until golden browned, turning halfway through.
- Alternatively, Bake in the preheated oven at 425 degrees for about 15-20 minutes or until golden brown on both sides.
