Ingredients
- 6-8 Medium flour tortillas
- 1 pound raw shrimp, (medium sized) peeled and deveined
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 cup bell pepper, chopped
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
- 1-2 cups mozzarella cheese, melted, (or cheddar, Mexican blend or Monterey Jack)
Instructions
- Heat a large skillet or pan on medium heat. Add oil, once hot, add onion, minced garlic, and bell pepper. Cook for 1-2 minute or until tender.
- Add the shrimp and taco seasoning. Mix well and cook for 2-3 minutes or until shrimp is just pink. Transfer to a bowl.
- Whip the pan with a paper towel. Add little oil. Place tortilla, and sprinkle cheese on one side of the tortilla.
- Spoon the shrimp (about 5-6) over the tortilla, sprinkle more cheese. Fold in half and cook for about 2-3 minutes on each side or until golden and crispy from outside.
- Repeat the same for the remaining tortillas. Serve immediately salsa, or guacamole.
