Ingredients

  • 3 tbsp butter, unsalted
  • 2 garlic cloves, minced
  • 3 tbsp yellow onion, chopped
  • 4 tbsp celery, chopped (more for garnish)
  • 3 tbsp all purpose flour
  • ½ cup corn kernels
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tsp creole seasoning blend (or fish seasoning)
  • 1 tbsp tomato paste
  • 1 cup heavy whipping cream
  • 2 cup milk
  • ½ lb large cooked shrimp
  • 4 tbsp sherry wine
  • ½ lb crabmeat, imitation
  • 3 tbsp parsley, chopped

Instructions

  1. Heat a large saucepan over medium-low heat. Melt butter. Add chopped onion and celery. Stir cook for about 2 minutes or until tender. Add in garlic and stir cook for 30 seconds.
  2. Add the flour and vegetables, combine well. Continue to cook for about 2-3 minutes. Add in tomato paste and seasonings.
  3. Slowly stir in milk and cook for about 3 minutes, stirring until thickened. Add in the heavy cream.
  4. Add the mixture to a food processor, pulse and return to the saucepan.
  5. Stir in the shredded crab, cooked shrimp, corn kernels and wine.
  6. Bring to a simmer. Adjust the seasonings.
  7. Serve immediately, garnish with freshly chopped parsley, celery and corn.
  8. If using raw shrimp - Heat a sauté pan on medium heat. Add oil, once hot, Add the shrimp. Season with salt and pepper and cook for about 4-5 minutes on each side or until cooked through.
