For the marinade

- 1 pound chicken tenders
- 5 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 cup extra virgin olive oil
- ½ teaspoon salt
- 1 teaspoon pepper, freshly ground preferred
For the carbonara
- 4 ounces pancetta diced
- 1 red bell pepper, thinly sliced
- 16 ounces spaghetti
- ½ cup butter, salted
- 2 cups heavy cream
- 2 tablespoons all-purpose flour
- 3 egg yolks
- ½ cup parmesan cheese, grated
- 1 tablespoon garlic, crushed
For the topping
- ¼ cup parmesan romano cheese, shredded
- 1 cup panko bread crumbs, Italian seasoned
- 1 cup mozzarella cheese, shredded
- 1 tablespoon garlic powder
- ½ cup butter melted, salted
- Parsley, freshly chopped
Instructions
- In a mixing bowl, add the chicken, shrimp, olive oil, pepper, Italian seasoning, minced garlic, and salt. Combine well and let it marinate for atleast 1 hour to 6 hours.
- Bring a pot of water to a boil. Add salt, then cook the spaghetti as per the package instructions or until tender. Drain and set aside.
- Heat a large skillet on medium-high. Add the entire chicken shrimp marinate and cook for about 6-7 minutes.
- Add the bell peppers, cook for another 5-6 minutes. Remove from the heat and set aside.
- Heat a large pot over medium-high heat. Add olive oil. Add the pancetta and cook, stirring often, for 4-5 minutes or until crispy.
- Add the butter, lower the heat to medium-low. Once melted, whisk in the flour. Add the parmesan cheese, crushed garlic, heavy cream, and egg yolks. Whisk constantly for 4-5 minutes to from scrambling.

- Preheat the boiler on low.
- In a small bowl, add mozzarella, parmesan romano cheese, melted butter, seasoned bread crumbs, and garlic powder. Stir well until combined.
