Ingredients

  • 1 pound shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 4 cups water
  • 1 cup stone-ground grits
  • salt and ground black pepper to taste
  • 2 cups cheddar cheese, shredded
  • 3 tablespoons butter
  • 1 cup scallions, thinly sliced
  • 2 tablespoons parsley, freshly chopped
  • 4 teaspoons lemon juice
  • 1 large clove garlic, minced

Instructions

  1. Heat a pot of water to boil. Add salt and pepper. Add in grits; lower the heat and simmer for about 20-25 minutes or until water is absorbed.
