Ingredients

  • 1 lb shrimp, large sized, peeled and deveined
  • 8 oz penne pasta
  • 1 Tbsp olive oil
  • 2 Tbsp cajun seasoning, divided
  • 2 garlic cloves, minced
  • 1/2 cup diced tomatoes
  • 2 Tbsp butter, unsalted
  • 1/2 cup parmesan cheese, grated plus more to serve
  • 2 Tbsp parsley, to garnish
  • 1 1/2 cups heavy whipping cream

Instructions

  1. Cook the pasta as per the package instructions or until al dente. Reserve about a cup of pasta water. Drain and cover to keep warm.
  2. In a bowl, add the shrimp and 1 Tbsp of the cajun seasoning. Coat well. Heat a skillet over medium heat. Add oil. Once hot, add the shrimp in a single layer cook for about 1-2 minutes on each side or until opaque. Transfer the shrimp to a plate.
  3. In the same skillet, add butter, once melted, add minced garlic and cook until fragrant for 30 seconds. Add in the diced tomatoes and stir cook for another 2-3 minutes.
  4. Pour in the heavy cream, remaining seasoning and grated parmesan cheese. Bring to a simmer, lower the heat and cook the sauce for about 2-3 minutes or until thickened.
  5. Add the shrimp and cooked pasta into the skillet. Toss to coat with the sauce or until heated through. If the sauce is too thick, add the reserved pasta water.
