Ingredients
- 1 lb shrimp, large sized, peeled and deveined
- 8 oz penne pasta
- 1 Tbsp olive oil
- 2 Tbsp cajun seasoning, divided
- 2 garlic cloves, minced
- 1/2 cup diced tomatoes
- 2 Tbsp butter, unsalted
- 1/2 cup parmesan cheese, grated plus more to serve
- 2 Tbsp parsley, to garnish
- 1 1/2 cups heavy whipping cream
Instructions
- Cook the pasta as per the package instructions or until al dente. Reserve about a cup of pasta water. Drain and cover to keep warm.
- In a bowl, add the shrimp and 1 Tbsp of the cajun seasoning. Coat well. Heat a skillet over medium heat. Add oil. Once hot, add the shrimp in a single layer cook for about 1-2 minutes on each side or until opaque. Transfer the shrimp to a plate.
- In the same skillet, add butter, once melted, add minced garlic and cook until fragrant for 30 seconds. Add in the diced tomatoes and stir cook for another 2-3 minutes.
