Cajun Shrimp Scampi – Tips and Tricks
Don’t overcrowd the pan: This will result in steamed shrimp instead of nicely browned ones. Cook the shrimp in batches if necessary.
Don’t overcook the shrimp: Shrimp cooks quickly! Overcooked shrimp will be tough and rubbery. Aim for a nice opaque pink color.
Let the pan get hot: This is key for getting a good sear on the shrimp.
Use high-quality ingredients: Fresh garlic, lemon juice, and good quality shrimp will make all the difference in the final flavor.
Best Recipe Variations
Spicy: Add a pinch of cayenne pepper or a few slices of jalapeno to the pan with the garlic for an extra kick.
Shrimp and Andouille Scampi: Diced Andouille sausage adds a smoky depth of flavor. Sauté the sausage before adding the shrimp.
Creamy Scampi: Increase the heavy cream to ½ cup for a richer sauce.
