Gluten Free Coconut Shrimp - This easy crunchy GF coconut shrimp made in less than 10 minutes consist of tender crispy shrimp perfect for quick appetizer.
Ingredients
- 1 lb shrimp, peeled and deveined, tails attached
- 1¾ cups all purpose flour blend, gluten free, divided
- 1¼ cups club soda
- 2 large eggs
- ¾ cup cornstarch
- 1 cup breadcrumbs, gluten free
- 3 cups sweetened shredded coconut
- salt and pepper to taste
- oil for frying
For the Sauce
- 2 tablespoon Dijon mustard
- ⅓ cup sweet chili sauce
- 1 cup orange marmalade
- ⅓ cup honey
- 1 teaspoon hot sauce
Instructions
- In a small bowl, combine all the sauce ingredients and refrigerate for atleast 20 minutes
- Take three shallow bowls. In the first bowl, add all purpose, salt, and pepper, combine.
- Whisk together the eggs, cornstarch, club soda, remaining gf flour, salt, pepper and club soda in the second bowl and whisk until a very thin and smooth. Add salt and pepper and whisk to combine.
- In the third bowl, add shredded coconut and breadcrumbs and toss to combine together.
- Take one shrimp at a time, hold with the tail and dredge it into the flour bowl, shake off any excess. Dip into the egg batter, drip off any excess. Finally by dredging into the coconut mixture, press to coat.
- Repeat for the remaining and place onto parchment-lined baking sheet. Cover with plastic wrap and refrigerate for atleast 30 minutes or up to 2 hours.
- Heat a large Dutch oven over medium heat. Add oil upto 2 inches. Once hot, fry the shrimp for about 3-4 minutes or until golden browned.
- Transfer to paper towels and serve immediately with the sauce.
