Ingredients

  • 4 Tbsp. butter, unsalted
  • 1/4 cup all-purpose flour
  • 1 small yellow onion, chopped
  • 12 oz. andouille sausage, sliced into 1/2" rounds
  • 2 cloves garlic, finely chopped
  • 1 medium green bell pepper, seeds and ribs removed, then chopped
  • 2 stalks celery, finely sliced
  • 1 Tbsp. Cajun seasoning
  • Freshly ground black pepper
  • Kosher salt
  • 1 (15 ounces) can fire-roasted diced tomatoes
  • 4 cup chicken broth, low-sodium
  • 1 bay leaf
  • 3 scallions, sliced
  • 1 lb. medium shrimp, peeled, deveined
  • Cooked white rice, for serving

Instructions

  1. Heat a large skillet on medium heat, Add butter, once melted, add flour. Cook for about 12 minutes, stirring constantly or until the roux is dark caramel like colored.
  2. Add peppers, onions, and celery. Stir cook for about 7-8 minutes or until softened.
  3. Stir in garlic, sausage, and Cajun seasoning. Season with salt and pepper.
  4. Stir in diced tomatoes, chicken broth, and bay leaf. Bring to a boil. Lower the heat and simmer for about an hour or until thickened, stirring occasionally.
  5. Add the shrimp just before last 6 minutes and cook until pink and cooked through. Add seasonings as per taste. Stir in scallions.
  6. Spoon gumbo over warm white rice to soak up the sauce. Top with chopped scallions and enjoy immediately.
