Pickled Shrimp - This easy sweet, juicy shrimp appetizer is easy to make for a perfect cocktail party and gatherings made in less than 10 minutes.
Ingredients
- 1 red onion, (medium sized) thinly sliced, divided
- 1 rib celery, cut into 2-inch lengths
- 1 lemon, sliced into very thin rounds, divided
- 4 cups water
- Salt, to taste
- 1 pound raw shrimp, peeled and deveined, tails attached
- 1/2 bulb fennel, fresh
- Few sprigs fresh thyme
- 2 teaspoons mustard seeds
- 1/2 cup apple cider vinegar
- 2 tablespoons capers and their juices
- 1 clove garlic, halved
- 1 teaspoon crushed red pepper
- 1/2 cup olive oil, or more if needed
Instructions
- In a large pan, add water, celery, half the red onion and lemon slices, pinch of salt. Bring to a boil, cover with a lid, lower the heat and simmer for 5-7 minutes.
- Add the shrimp and remove the pan from the heat and cover again. Set aside for 5-7 minutes or until pink.
- Trim the fronds from the fennel keeping a handful aside. Cut in half through the root. Set the pieces, cut sides down, and thinly slice the fennel.
- Layer the cooked shrimp, lemon slices, sliced fennel, red onion, and a few fennel fronds, garlic, thyme sprigs, capers, and mustard seeds in a large bowl.
- Combine the vinegar and oil and pour into the shrimp. Add enough liquid until the shrimp is fully covered.
- Cover with a tight lid and refrigerate for at least 24-72 hours.
- When ready to serve, spoon the mixture into a bowl.
- Serve immediately.
