Ingredients

  • 18-20 shrimp, peeled and deveined,
  • 1 cup Cornstarch
  • 2 long dried Red Chilies, roughly chopped
  • 1 long fresh Thai Red Chilli, finely chopped
  • 1 tbsp Vegetable Oil
  • 2 Green Onions, sliced
  • Lime wedges to serve
  • Some Coriander for garnish
  • Oil for frying

For the Marinade

  • 1 Egg, whisked
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Chinese Cooking Wine

For the Salt Pepper Mix

  • 1 tbsp Sichuan Peppercorns
  • 1 tbsp Sea Salt
  • 1 tbsp Black Peppercorns

Instructions

  1. Heat a frying pan on medium heat. Add the Sichuan Peppercorns and Black Peppercorns. Toast for 1-2 minutes or until fragrant. Transfer to a grinder and make a fine powder. Set aside in a bowl.
  2. Add Sea Salt and mix well. That's it and your salt pepper mix is ready.
  3. Slice the half of the Shrimp from back side into a butterfly shape.
  4. In a bowl, add the Shrimp, cooking wine, soy sauce, and egg. Let sit for about 10-15 minutes.
  5. In a large bowl, add in cornstarch. Add in marinated Shrimp. Mix well until well coated with the cornstarch and shake off any excess.
  6. Heat a wok on high heat, add oil. Once hot, add the shrimp , one at a time and fry for about 2-3 minutes or until golden browned. Drain on a paper lined towel to soak up excess oil.
  7. Quickly whip up the wok, add in oil over medium-high heat. Add in the garlic, Thai red chilli, green onions and dried red chillies.
  8. Stir fry for few minutes. Add in fried Shrimp. Sprinkle prepared salt and pepper mix. Toss to combine.
  9. Remove from heat. Garnish with chopped coriander and lime wedges. Serve immediately and enjoy.
