Ingredients
- 1½ pounds peeled, deveined, large shrimp (tails removed), divided
- 1 cup panko bread crumbs
- 3 scallions, finely chopped
- 1 cup tartar sauce
- 3 tablespoons vegetable oil
- ⅛ teaspoon cayenne pepper
- 2 tablespoons mayonnaise
- ¼ teaspoon pepper
- ½ teaspoon salt
- 4 leaves Iceberg lettuce
- 4 hamburger buns, toasted if desired
Instructions
- In a food processor, add the panko and pulse. Transfer to a shallow plate.
- In a empty processor. Place 1 cup of shrimp, mayonnaise, cayenne, salt, and pepper. Pulse until finely chopped, about 8 pulses. Add remaining shrimp and give 4 more pulses. Transfer to a bowl and stir in scallions.
- Make 4 shrimp patties (¾-inch-thick) by diving the mixture into equal amount.
- Take 1 patty at a time, dredge into panko crumbs and transfer to a plate.
- Heat nonstick skillet over medium heat. Add oil, once hot. Add the patties and cook for about 3 - 5 minutes on each side or until golden brown.
- Transfer to paper lined towel plate. Take a bun and spread the tartar sauce evenly into the bottom of both side. Place burgers and lettuce leaves on top.
- Cover with the top and serve immediately.
