Ingredients

  • 1 pound jumbo shrimp, peeled and deveined, tails removed
  • 1 cup whole wheat plain panko, or gluten-free (plus 3 tablespoons)
  • ¼ cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 2 tablespoons parsley, freshly chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoons light mayonnaise
  • 2 tablespoon fresh lemon juice
  • 1 large egg
  • ½ teaspoon garlic powder
  • 3/4 teaspoon Old Bay seasoning
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • hot sauce, for serving, optional

Instructions

  1. Pat dry the shrimp with a paper towel, add in a food processor and pulse until shrimp are finely chopped. Transfer to a bowl.
  2. Add red onion, red pepper, parsley, mayo, mustard, 3 tablespoons of panko, celery, egg, garlic powder lemon juice, old bay, and pepper. Mix Combine well.
  3. On a small plate, add 1 cup panko with salt and pepper. Combine well.
  4. Make the shrimp mixture into 1-inch patty (about 7-8 patties). Place in the panko mixture and coat well.
  5. Transfer to a plate and repeat the same with remaining mixture.
  6. Heat a large skillet on medium-high heat. Add oil. Once hot, Layer the patties in single layer (4 at a time) and cook for about 3-4 minutes, flip and cook for another 2-3 minutes.
  7. Transfer on a plate, add remaining tablespoon of oil and repeat the same for the remaining patties.
  8. Sprinkle with chopped parsley, lemon wedges and hot sauce.
  9. Enjoy immediately.
