Ingredients
- 1 pound shrimp, peeled and deveined (15-20 pieces)
- 1 pineapple
- 1 cup BBQ sauce
- Kosher salt and freshly ground black pepper
For the Rice:
- 10 ounces basmati or jasmine rice, pre cooked
- 2 scallions, finely chopped
- 1/4 cup corainder, freshly chopped
- 1 lime, zested
- Kosher salt and freshly ground black pepper
- To serve:
- 1/4 cup corainder leaves, freshly chopped
- Lime wedges
Instructions
- Preheat oven to 350 degrees F.
- Slice the pineapple in half. Slice from the center, cut out the flesh and discard. Chop 2/3 of the pineapple flesh, finely chop and set aside.
- Add the remaining pineapple flesh to a food processor or blender along with the BBQ sauce. Season with salt and pepper, blend until smooth.
- Add the shrimp to an aluminum foil. Sprinkle with salt and pepper, add pineapple BBQ sauce over the top.
- Close the aluminum foil pouch and place on the bottom rack of the oven. Cook for about 10-12 minutes or until shrimp are opaque.
- Make the rice - In the bowl, add the coriander, scallions, reserved chopped pineapple, rice, zest and salt and pepper. Stir to combine.
- Fill the both halves of the pineapple with the rice mixture. Add the shrimp place them equally on both pineapple.
- Pour the bbq juices from the on top. Add chopped coriander and squeeze juice from the lime wedges.
