Ingredients
- 30-32 dumpling wrappers (or store-bought won ton wrappers)
For the filling:
- 12 ounces shrimp, peeled and deveined
- 4 ounces shiitake or button mushroom caps, stems removed then finely chopped
- 1 teaspoon garlic, minced
- 10 ounces green cabbage, finely chopped
- 1 teaspoon ginger, finely grated
- 1/2 small onion, finely chopped
- 2 teaspoons sesame oil
- 1 teaspoon soy sauce
- pinch pepper
- salt to taste about 1/4 teaspoon
For the dipping sauce
- 1 tablespoon soy sauce
- 1 tablespoon water
- 1 teaspoon vinegar
- pinch of black pepper (or red chili pepper flakes)
Instructions
- Make the filling - Add the shrimp in a food processor and pulse few times or finely chop the shrimp.
- In a bowl, add the chopped cabbage and add 1 teaspoon of salt. Let sit for 10 minutes. Drain excess water.
- In a large bowl, combine shrimp, cabbage, onion and mushrooms. Mix well.
- To assemble - Place the wrapper on a flat surface, place 1 tbsp. filling and seal tightly from the edges.
- Dust the bottom with flour to avoid sticking. Repeat the same process and prepare the remaining wrappers.
- Cooking methods - Place the dumplings in a steamer for about 10 minutes.
- Bring a pot of water to a boil. Add dumplings (2-3 at a time), stirring gently so they don't stick. Cook for about 2-3 minutes
- Heat a pan over medium high heat. Add 1 tablespoon of oil. Add the dumplings and fry for about 1-2 minutes or until the bottoms are golden browned.
