- 1 pound shrimp, peeled and deveined, tails removed
- 1 pound fettuccine pasta
- kosher salt
- Freshly ground black pepper
- 3 Tbsp. butter, divided
- 2 Tbsp. all-purpose flour
- 2 cloves garlic, minced
- 1/2 cup whole milk
- 1 cup heavy cream
- 1 cup Parmesan, freshly grated, more for garnish
- 1 egg yolk
- 1 Tbsp. parsley, chopped
Instructions
- Bring a pot of water to boil and cook the fettuccine as per the package instruction until tender. Reserve a cup of pasta water. Drain.
- Heat a large skillet over medium heat. Add 1 tablespoon butter. Once melted, add shrimp, salt and pepper.
- Stir and cook for about 2-3 minutes or until pink and opaque. Remove from skillet and set aside.
