Ingredients
- 25 - 30 shrimp, deveined and tail attached
- 6 potatoes, cut into 1/2 inch wedges
- 1 cup vegetable oil
- 3 tablespoons butter
- salt and pepper to taste
- 1 cup Oaxaca Cheese, grated
- 1 teaspoon minced garlic
- 1 avocado, sliced
- 1 teaspoon coriander leaves
- 1/2 cup Chipotle crema
- 1/2 cup crema con sal
- Pickled jalapeños
- 1 tbsp of salsa Negra
Instructions
- Bring a pot of water to boil on medium flame. Add potato wedges and boil for about 10-12 minutes. Drain.
- Season potatoes with salt and pepper.
- Heat a frying pan over a medium high heat. Add oil, once hot, add boiled potatoes and cook for about 10 minutes per side or until golden crispy. Transfer to a paper towel lined plate.
- Place the fries on a tray. Sprinkle with Oaxaca cheese.
- In the same pan, melt butter over a high heat. Add shrimp and garlic. Cook for about 3 minutes, stirring frequently or until pink.
