Ingredients

  • 2 pounds shrimp, peeled and deveined
  • 1-2 teaspoons fresh oregano (or ½ teaspoon dried)
  • 3 medium cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon pepper flakes
  • 2 teaspoons fresh thyme
  • 1 teaspoon black pepper, freshly ground
  • 3-4 tablespoons lemon juice
  • 3-4 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • Salt to taste

Optional

  • 1 red onion, in large slices
  • 2 bell pepper, cut in large chunks
  • 1 squash, in large slice
  • 1 zucchini, in large slice

Instructions

  1. Soak the skewers for at least 15-20 minutes before threading to prevent burning when grilling.
  2. Heat the gas grill on medium-high heat. Lightly spray with oli if using a grill pan.
  3. In a medium bowl, add thyme, Italian seasoning, olive oil, cumin, garlic, oregano, black pepper, pepper flakes, and lemon juice. Combine well and set aside.
  4. In a large bowl, add shrimp, season with salt, add the spicy mixture, combine well and let marinate for 30 minutes to overnight in the refrigerator.
  5. Rub the leftover marinade and salt on the veggies for added flavors.
  6. Thread the marinated shrimp onto the skewers. One shrimp, then one vegetable cube.
  7. Place the skewers on a hot grill pan and grill for about 2-3 minutes on each side or until vegetables are tender crisp and fully cooked.
