Ingredients
- 2 pounds shrimp, peeled and deveined
- 1-2 teaspoons fresh oregano (or ½ teaspoon dried)
- 3 medium cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon pepper flakes
- 2 teaspoons fresh thyme
- 1 teaspoon black pepper, freshly ground
- 3-4 tablespoons lemon juice
- 3-4 tablespoons olive oil
- ½ teaspoon Italian seasoning
- Salt to taste

- 1 red onion, in large slices
- 2 bell pepper, cut in large chunks
- 1 squash, in large slice
- 1 zucchini, in large slice
Instructions
- Soak the skewers for at least 15-20 minutes before threading to prevent burning when grilling.
- Heat the gas grill on medium-high heat. Lightly spray with oli if using a grill pan.
- In a medium bowl, add thyme, Italian seasoning, olive oil, cumin, garlic, oregano, black pepper, pepper flakes, and lemon juice. Combine well and set aside.
- In a large bowl, add shrimp, season with salt, add the spicy mixture, combine well and let marinate for 30 minutes to overnight in the refrigerator.
