Ingredients

  • ¼ lb shrimp, deveined, then finely chopped
  • 2 lbs chicken thigh, ground
  • 2 eggs
  • 2 tbsp + 1 tsp fish sauce
  • 1 ½ cup celery, finely chopped
  • 1 cup green onion, finely chopped
  • 2 cups carrots, finely chopped
  • 1 tsp pepper
  • ¼ cup of garlic, minced
  • 40 lumpia wrappers
  • oil for frying

Instructions

  1. In a mixing bowl, add the chicken, shrimp, vegetables and all the remaining ingredients except for the wrappers.
  2. Combine well until coated with the meat. Refrigerate for about 2-3 hours.
  3. Take out the wrappers from the package 30 minutes before making the wrappers. Place under a towel to keep the them moist.
  4. Place about 2 tablespoons of the meat mixture in a straight line onto the wrapper. Fold the sides in and roll the lumpia. Lightly wet the tip of your hand and seal the edges.
  5. Repeat the same for the remaining wrappers.
  6. Heat a skillet on medium heat, add oil, once fully hot. Add the 4-5 lumpia into the oil and fry for few minutes or until golden browned on all sides.
  7. Transfer to paper towels and serve hot immediately.
