Shrimp Lumpia - This easy crispy lumpia consist of juicy shrimp and chicken with loaded veggies then fried until golden browned.
Ingredients
- ¼ lb shrimp, deveined, then finely chopped
- 2 lbs chicken thigh, ground
- 2 eggs
- 2 tbsp + 1 tsp fish sauce
- 1 ½ cup celery, finely chopped
- 1 cup green onion, finely chopped
- 2 cups carrots, finely chopped
- 1 tsp pepper
- ¼ cup of garlic, minced
- 40 lumpia wrappers
- oil for frying
Instructions
- In a mixing bowl, add the chicken, shrimp, vegetables and all the remaining ingredients except for the wrappers.
- Combine well until coated with the meat. Refrigerate for about 2-3 hours.
- Take out the wrappers from the package 30 minutes before making the wrappers. Place under a towel to keep the them moist.
- Place about 2 tablespoons of the meat mixture in a straight line onto the wrapper. Fold the sides in and roll the lumpia. Lightly wet the tip of your hand and seal the edges.
- Repeat the same for the remaining wrappers.
- Heat a skillet on medium heat, add oil, once fully hot. Add the 4-5 lumpia into the oil and fry for few minutes or until golden browned on all sides.
- Transfer to paper towels and serve hot immediately.
