Ingredients

For The Shrimp

  • 7 ounces shrimp, deveined (medium-sized)
  • 1 tablespoon oyster sauce
  • 2 teaspoons cornstarch
  • ¼ teaspoon white pepper powder
  • 1 tablespoon shaoxing wine (or white wine vinegar)
  • 1 teaspoon oil

For The Noodles

  • 2 teaspoons dark soy sauce (or tamari)
  • 7 ounces rice vermicelli noodles, dry thin
  • 1 tablespoon oil

Other Ingredients

  • 2 tablespoons ginger, julienned
  • 3 tablespoons oil
  • 1 medium carrot, julienned
  • 4-5 shallots, thinly sliced
  • 5 ounces green cabbage, shredded
  • 2 green onions, cut into 2 inch pieces
  • ½ teaspoon sesame oil
  • ¼ teaspoon white pepper powder
  • ½ teaspoon salt
  • 1 tablespoon dark soy sauce

Instructions

  1. Cook the noodles as per the package instructions. Rinse the noodles with cold water. Drain thoroughly.
  2. In a large bowl, coat noodles with soy sauce and oil. Set aside.
  3. In a mixing bowl, add the shrimp, curry powder, cornstarch, Shaoxing wine, oyster sauce, white pepper powder, and oil. Combine well and marinate for atleast 30 minutes.
  4. Heat a wok on high heat. Add oil, once hot, add shallots and ginger. Stir-fry for 10 seconds.
  5. Add the marinated shrimp and the marinade and cook for about 3-4 minutes or until the shrimp are almost cooked and pink, stirring frequently.
  6. Now add cabbage, carrot, and scallions, stir-fry for another 20-30 seconds.
  7. Add sesame oil, soy sauce, and salt, white pepper powder. Combine well.
  8. Add the prepared noodles and stir-fry everything until heated through. Distribute the shrimp and vegetables.
  9. Adjust the salt and sauces as desired.
  10. Serve hot immediately.
