Ingredients

  • 6-8 Medium flour tortillas
  • 1 pound raw shrimp, (medium sized) peeled and deveined
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1-2 cups mozzarella cheese, melted, (or cheddar, Mexican blend or Monterey Jack)

Instructions

  1. Heat a large skillet or pan on medium heat. Add oil, once hot, add onion, minced garlic, and bell pepper. Cook for 1-2 minute or until tender.
  2. Add the shrimp and taco seasoning. Mix well and cook for 2-3 minutes or until shrimp is just pink. Transfer to a bowl.
  3. Whip the pan with a paper towel. Add little oil. Place tortilla, and sprinkle cheese on one side of the tortilla.
  4. Spoon the shrimp (about 5-6) over the tortilla, sprinkle more cheese. Fold in half and cook for about 2-3 minutes on each side or until golden and crispy from outside.
  5. Repeat the same for the remaining tortillas. Serve immediately salsa, or guacamole.
