Ingredients

  • 1 lb shrimp, medium sized
  • 1 1/2 tbsp olive oil, divided
  • 1/2 teaspoon smoked paprika
  • Kosher salt and ground black pepper, to taste
  • 1/2 tsp Italian seasoning
  • 3-4 garlic cloves, minced
  • 1 yellow onion, diced
  • 4-5 cups fish broth, hot (low-sodium)
  • 1 cup arborio rice (or sushi rice)
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup parsley, chopped

Instructions

  1. Heat a large skillet over medium heat. Add 1 tablespoon of oil. Once hot, add the shrimp in a single layer.
