For the tartar sauce
- 1 cup mayonnaise
- 1 tbsp gherkin/cornichon, very finely chopped
- 1 1/2 tsp fresh dill, finely chopped
- 1 tsp parsley, freshly chopped
- 1 tsp capers, drained and finely chopped
- 1 1/2 tbsp lemon juice, fresh
- 1/2 tsp white sugar
- 1/4 tsp salt
Thai sweet chili sauce
- 5 tbsp sweet chilli sauce
- 1 tbsp white sugar (or other)
- 2/3 cup lime juice, freshly squezed
- 5 tbsp olive oil
- 1 garlic clove, minced
- 1/4 cup coriander leaves, finely chopped

- For the tartar and cocktail sauce: Combine all the ingredients in a bowl and adjust the salt as per taste.
