Ingredients

  • 1 lb asparagus, trimmed, cut into 2″ pieces
  • 1/2 lb spaghetti
  • 3 Tbsp olive oil, divided
  • 3 Tbsp butter, unsalted, divided
  • 4 minced garlic cloves
  • 1/4 tsp red pepper flakes, or to taste
  • 1 1/4 tsp fine sea salt, divided, plus more
  • 1 lb shrimp, (large sized), peeled and deveined
  • 1 Tbsp lemon zest, grated
  • 1/4 tsp black pepper, ground, or to taste
  • 1/3 cup fresh parsley, finely chopped
  • 1/4 cup fresh lemon juice
  • Parmesan, freshly grated

Instructions

  1. Bring a large pot of water to a boil, add 1 Tbsp olive oil and 1 Tbsp salt. Cook the pasta as per the package instructions until tender.
  2. Place a large pan over medium high heat. Add add olive oil and butter. Add trimmed asparagus and season with salt and pepper.
  3. Cook uncovered until crisp-tender for about 5 minutes, stirring occasionally. Remove from pan and set aside.
  4. In the same pan, add more oil and butter. Once melted, add red pepper flakes and minced garlic. Saute for 1 minute, stirring frequently.
  5. Add shrimp in a single layer. Season with salt and black pepper. Saute for about 1-2 minutes on each side or until shrimp are pink and opaque.
  6. Add lemon juice, zest, and chopped parsley. Stir to combine. Turn off the heat. Add the cooked pasta and asparagus to the pan. Toss to coat and sprinkle with freshly grated parmesan.
  7. Serve immediately.
