- 1 lb asparagus, trimmed, cut into 2″ pieces
- 1/2 lb spaghetti
- 3 Tbsp olive oil, divided
- 3 Tbsp butter, unsalted, divided
- 4 minced garlic cloves
- 1/4 tsp red pepper flakes, or to taste
- 1 1/4 tsp fine sea salt, divided, plus more
- 1 lb shrimp, (large sized), peeled and deveined
- 1 Tbsp lemon zest, grated
- 1/4 tsp black pepper, ground, or to taste
- 1/3 cup fresh parsley, finely chopped
- 1/4 cup fresh lemon juice
- Parmesan, freshly grated
Instructions
- Bring a large pot of water to a boil, add 1 Tbsp olive oil and 1 Tbsp salt. Cook the pasta as per the package instructions until tender.
- Place a large pan over medium high heat. Add add olive oil and butter. Add trimmed asparagus and season with salt and pepper.
- Cook uncovered until crisp-tender for about 5 minutes, stirring occasionally. Remove from pan and set aside.
- In the same pan, add more oil and butter. Once melted, add red pepper flakes and minced garlic. Saute for 1 minute, stirring frequently.
- Add shrimp in a single layer. Season with salt and black pepper. Saute for about 1-2 minutes on each side or until shrimp are pink and opaque.
