Ingredients

  • 1/2 lb med-large shrimp, deveined and peeled
  • 7 oz spaghetti long pasta
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp parsley, freshly chopped
  • 1 tsp crushed red pepper
  • 6 cloves garlic, thinly sliced

Garnish

  • Freshly grated parmesan cheese
  • Lemon juice, optional

Instructions

  1. Season shrimp with salt and pepper.
  2. Heat a pot of water over high heat, bring water to boil. Add salt and cook the pasta until al-dente. Reserve 1 cup of pasta water. Drain and set aside.
  3. Heat a skillet over medium heat. Add 1 tbsp of butter. Add shrimp and cook for about 2-3 minutes or until just cooked through. Remove and set aside.
  4. Add the remaining 1 tbsp butter with olive oil. Add minced garlic and stir cook until lightly golden brown, stir in the red pepper flakes and mix well.
  5. Add the cooked pasta with 1/2 cup of pasta water. Combine well.
  6. Add the cooked shrimp, season with salt and stir to combine.
  7. Cook until the pasta has aborbed most of the sauce.
  8. Remove from the heat and add freshly chopped parsley.
  9. Garnish with parmesan cheese and lemon juice and enjoy immediately.
