Ingredients

For the Dipping Sauce

  • ¾ cup Japanese soup stock, dashi packet
  • 3 Tbsp soy sauce
  • 2 tsp sugar
  • 2 Tbsp mirin

For the Tempura

  • 10 prawns, large sized, peeled, tail attached
  • 3 cups oil
  • Cornstarch, for dusting

For the Batter

  • 1 cup all-purpose flour
  • 1 large egg
  • 200 ml iced water

Instructions

  1. Combine all the ingredients for the tempura dipping sauce.
  2. In a small pan, combine soup stock, mirin, soy sauce, and sugar. Bring to a boil. Reduce the heat and simmer for few minutes. Remove from the heat and set aside.
  3. Pat dry the shrimp with paper towels any remove any excess moisture.
  4. Heat a wok on high heat. Add sesame oil.
  5. In a large bowl, add all-purpose flour, eggs and iced water in 1:1 ratio.
  6. Whisk the egg mixture and slowly pour into the flour. Mix the batter until well combined. Keep the batter cold.
  7. Lightly dust the shrimp with cornstarch.
  8. Dip the cornstarch coated shrimp in the batter, then into the oil. Fry for about 2-3 minutes or until golden brown. Transfer to a plate lined with a paper towel.
  9. Enjoy with the dipping sauce.
