Ingredients

  • 1 pound raw shrimp, medium sized, peeled and deveined
  • 1 tablespoon ketchup
  • 1 cup salsa
  • 1 mango, riped, peeled, pitted and diced
  • 1 tablespoon olive oil
  • 1 taco seasoning, reduced-sodium
  • 6 flour tortillas, warmed, 10 inches
  • 6 tablespoons sour cream, reduced-fat
  • 1-1/2 cups coleslaw mix

Instructions

  1. In a small mixing bowl, add the mango, ketchup and salsa. Combine well and set aside.
  2. In another bowl add the shrimp and season with taco seasoning and oil. Coat well, cover and set aside.
  3. Heat a skillet or wok on medium-high heat. Add the shrimp and cook for about 2-3 minutes or until pink.
  4. Warm the tortillas until heated through. Top with coleslaw mix, cooked shrimp and salsa mixture.
  5. Fold the tortilla and serve with sour cream.
  6. Enjoy immediately.
