Ingredients
- 1 pound raw shrimp, medium sized, peeled and deveined
- 1 tablespoon ketchup
- 1 cup salsa
- 1 mango, riped, peeled, pitted and diced
- 1 tablespoon olive oil
- 1 taco seasoning, reduced-sodium
- 6 flour tortillas, warmed, 10 inches
- 6 tablespoons sour cream, reduced-fat
- 1-1/2 cups coleslaw mix
Instructions
- In a small mixing bowl, add the mango, ketchup and salsa. Combine well and set aside.
- In another bowl add the shrimp and season with taco seasoning and oil. Coat well, cover and set aside.
- Heat a skillet or wok on medium-high heat. Add the shrimp and cook for about 2-3 minutes or until pink.
- Warm the tortillas until heated through. Top with coleslaw mix, cooked shrimp and salsa mixture.
