Ingredients
- 1 pound shrimp, large, peeled and deveined (thaw if frozen)
- 2 Tbsp olive oil
- 1 white onion, diced
- 1-2 large jalapeño, sliced
- 1 red bell pepper, chopped into thin strips
- 3 Tbsp red curry paste
- 1 1/2 Tbsp fish sauce
- 2 Tbsp brown sugar
- 2-3 Tbsp Thai basil, freshly chopped for topping
- 1 (14 oz) can coconut milk, unsweetened
- 2 Tbsp cornstarch slurry
- lime wedges for serving
Instructions
