Ingredients

  • 1 pound shrimp, large, peeled and deveined (thaw if frozen)
  • 2 Tbsp olive oil
  • 1 white onion, diced
  • 1-2 large jalapeño, sliced
  • 1 red bell pepper, chopped into thin strips
  • 3 Tbsp red curry paste
  • 1 1/2 Tbsp fish sauce
  • 2 Tbsp brown sugar
  • 2-3 Tbsp Thai basil, freshly chopped for topping
  • 1 (14 oz) can coconut milk, unsweetened
  • 2 Tbsp cornstarch slurry
