Ingredients

  • 1 lb jumbo sized shrimp, peeled and deveined
  • 1 tsp roasted sesame oil
  • ¾ tsp kosher salt
  • 3-4 dashes white pepper powder
  • 2 slices fresh ginger
  • 3 scallions, cut into 1 ½-inch, plus 1 scallion chopped for garnish
  • 1 sweet bell pepper, cut into ¾-inch
  • 2 minced garlic cloves
  • 1 package tofu, cut into ¾-inch cubes
  • 2 small mangoes, (or pineapple), cut into ¾-inch pieces
  • 1 cup chicken or vegetable broth
  • 1 Tbsp rice wine (or dry sherry or mirin)
  • 2 Tbsp arrowroot starch (or cornstarch)
  • 3 Tbsp Japanese rice vinegar (or apple cider vinegar)
  • 4 Tbsp tamari or soy sauce
  • 3 Tbsp honey
  • 2 Tbsp oil for frying
  • 1 Tbsp. cashews, toasted for garnishing

Instructions

  1. In a small bowl, add the shrimp, salt, white pepper powder and sesame oil. Combine well and set aside.
  2. In a separate bowl, whisk broth, cooking wine, arrowroot starch, rice vinegar, tamari and honey. Set aside.
  3. Heat a wok on medium-high heat. Add a drizzle of oil. Saute the shrimp for few minutes or until pink, Remove and set aside.
  4. Add more oil. Add ginger slices and scallions and stir cook for few seconds. Add minced garlic and cook for another 10 seconds.
  5. Add bell peppers, sauteing until tender crisp. Add tofu cubes and saute until heated through. Sprinkle with kosher salt.
  6. Pour in sauce and bring it to a simmer until thickened. Add mangoes along with cooked shrimp. Cook until just heated through.
  7. Adjust the seasoning as needed. Add precooked noodles (if desired) and coat with the sauce. Or serve immediately over steamed rice with scallions and toasted cashews on top.
